    Long-wave instabilities of thin viscous films flowing down inclined planes are studied. Numerical solutions of the full long-wave evolution equation show that wave profiles grow superexponentially and evolve toward breaking when the surface tension takes on realistically small values. This contrasts with the solutions of the Kuramoto–Sivashinsky equation, which do not tend toward breaking. The use of the full equation thus dispenses with the need to introduce the formally small curvature terms into the Kuramoto–Sivashinsky equation, as suggessted by Rosenau and Oron [Phys. Fluids A 1, 1763 (1989)].

    A total 264 pork loins were selected to represent a wide range of pork quality of the longissimus thoracis et lumborum. CIE L*C*h color space showed a closer relationship to the subjective color score than L*a*b*color space. Lightness (L*) was the best measure to predict water-holding capacity (WHC). There were highly significant (p 〈 0.001) correlations between the measures of color and WHC, and curvilinear relationships between either WHC and color or pHu were observed. In normal muscle color range (reddish-pink), there was considerable variation in WHC. Within the RSE + RFN groups of muscles, less variation of WHC could be accounted for by variations in color measurements. Color and WHC were not closely related and suggest that the RSE (reddish-pink, soft, exudative) condition should be classified as a separate quality category of pork muscle.

    Fresh pork Canadian backs, cut into boneless pork chops, were cooked to 71C internal temperature by grilling at 93, 121, 148, 176, or 204C. Cooking times were significantly longer for chops grilled at 93C than for those grilled at the higher temperatures. Yield, moisture, and crude fat values of the chops in the different treatments were similar. Chops grilled at 204C had significantly lower retention values for thiamin and vitamin E and had lower mean retention values for vitamin B-6. Retention values for selenium were similar for all treatment groups. Shorter cooking times along with higher vitamin retentions were obtained in boneless pork chops grilled at 121, 148, and 176C.

    Rupture dynamics of a thin liquid film on a heated substrate has been studied by integrating the fully-coupled nonlinear system of continuity, momentum, and energy equations. The system is solved using finite element method in an Arbitrary-Lagrangian-Eulerian (ALE) frame of reference to update precisely the motion of the moving free-surface. The results of these simulations are compared with those from the long-wave theory. Fully nonlinear process of spontaneous rupture due to thermocapillarity is shown for the first time. © 1995 American Institute of Physics.

    Abstract The superconducting Sr 1−x K x BiO 3 samples with x = 0.45 – 0.6 were synthesized by the high-pressure-high-temperature technique in a belt type apparatus (2 GPa, 700 °C, 1 h, Pt capsules) with stoichiometric mixtures of Sr 2 Bi 2 O 5 , Bi 2 O 3 and KO 2 as described earlier. 1 The X-ray diffraction results appear as a single perovskite-like phase. The superconductivity occurs at T c ∼ 12 K in the A. C. susceptibility measurement. The onset (zero resistivity) temperature of superconductivity in resistivity measurement of the investigated sample was $$T_{conset} = 12.5{\text{ }}K(T_{czero} = 10.2{\text{ }}K)$$ . The transition temperature region was a little bit broad and a shoulder was present about 11.3 K indicating probably the existence of crystallites of different K content. The particularly interesting point is that the resistance begins to reappear at T 〈 6 K at zero magnetic field. As the external magnetic field is applied, the reentrant resistance disappears and superconductivity is recovered until the applied magnetic field becomes higher than 0.65 Tesla. The superconductivity for T 〈 6 K is destroyed for the higher magnetic field. The Tc onset decreases as the magnetic field increases like in the BCS type superconductors. The transition region becomes broader under the magnetic field, which indicate a kind of vortex transition as in the case of high T c cuprates.
