Samples were analysed for available lysine, thiamine and riboflavin before salting, after salting, after drying and after 1 month's storage at 20°C. Final losses of each of these nutrients were lowest when the fish were pickle cured. Losses were also lower when fresher raw material was used. the use of good quality fish and a pickle salting method is therefore recommended for this type of product.Type of Medium: Electronic ResourceURL: -

Salt (10 to 40%) was added to the unwashed mince to prepare dried cakes with enhanced keeping quality. The dried cakes were assessed for peroxide and TBA values, total viable count and for sensory attributes after preparation and after a 3-month storage period at 29±1°C. The cakes were reconstituted by desalting in boiling water. Salted dried cakes prepared with 15,20,30 and 40% salt were found to be stable and have little sensory deterioration over the 3-month storage period which is adequate to simulate distribution of products at tropical ambient temperature.Type of Medium: Electronic ResourceURL: -

A derivatization procedure is reported. It involves dissolving benzoyl chloride in acetonitrile to enhance its reaction with biogenic amines. This was compared with benzoyl chloride dissolved in methanol and with only benzoyl chloride to find the optimal condition for benzoylation of biogenic amines in terms of time and derivatization conditions. A gradient elution system was used for analysis with a mixture of acetonitrile and HPLC grade water and took less than 7 min to complete the analysis. The application of this method to detect biogenic amines in herring stored at 2 ± 2 °C and in modified atmosphere packing (MAP) was investigated. The concentrations of amines in herring held at 2 ± 2 °C increased more rapidly than herring stored in MAP. The level of TMA in herring held at 2 ± 2 °C was higher than herring stored in MAP. No significant differences were found in histamine concentrations between herring stored at 2 ± 2 °C and in MAP during the early stages of storage period but there was a significant difference (P 〈 0.05) after 6 days of storage. Significant differences were found (P 〈 0.05) in concentrations of putrescine (after 6 days) and cadaverine (after 4 days) between herring held at 2 ± 2 °C and in MAP.Type of Medium: Electronic ResourceURL: -

Muscle fat content and total depot fat (peritoneal and perivisceral fat) indicated a seasonal variation with minimum values observed in late spring and maximum in late summer. Gonadosomatic indices of cultured fish were lower than those found in wild specimens. Lipid content of cultured sea bream was much higher than that of wild fish. Differences were also observed in fatty acid profiles. Cultured fish were characterized by higher levels of monoenes, n-9 and 18:2n-6 fatty acids and wild fish by higher levels of saturates, 20:4n-6, n-3 fatty acids and n-3/n-6 ratios. Methods: Three hundred thirty-one arteries and veins were sealed by application of precisely controlled electrothermal energy and physical pressure, allowing for brief cooling in compression, in experimental animals and fresh abattoir vessels. These seals were compared for bursting strength with occlusions by ultrasonic and bipolar coagulation, surgical clips, and ligatures. Results: Ultrasonic and bipolar occlusions were significantly less likely to have burst strengths greater than 400 mmHg as compared with seals, clips, and ligatures (p 〈 0.001). Seal competence could be visually assessed by its translucence. Conclusions: Precise energy control with physical compression, including a brief cooldown, produces a distinctive, translucent seal of partially denatured protein that can typically be transected after a single application. These seals have bursting strengths comparable to those of clips and ligatures and resist dislodgement because they are intrinsic to the vessel wall structure.Type of Medium: Electronic ResourceURL: -
