Published 1986Staff ViewISSN: 1089-7690Source: AIP Digital ArchiveTopics: PhysicsChemistry and PharmacologyNotes: The T-Rittner model derived from quantum mechanical exchange perturbation theory is modified by incorporating (i) new values of molecular state polarizabilities, (ii) the recent values of van der Waals potentials estimated from the Kirkwood–Muller (KM) formula, and (iii) the repulsive hardness parameters evaluated from the overlap integrals using the exchange charge model (ECM). With the help of this modified potential model we calculate values of binding energy W, dipole moment μ, vibrational frequency ωe, vibrational anharmonicity constant ωeXe, and rotational constant αe for diatomic molecules of alkali halides and hydrides. The results obtained in the present study are compared with the experimental data. A good agreement between calculated and experimental values supports the validity of the modified T-Rittner model used in the present study.Type of Medium: Electronic ResourceURL: -

Color degradation was studied in respect to both visual green color (Hunter -a value) and total color [L × (-a) × b]. Degradation of color followed 1st-order reaction kinetics. Temperature dependence of the degradation rate constant obeyed the Arrhenius relationship with activation energies ranging between 19.71 and 41.64 kJ/mol. Higher activation energy value indicated greater temperature sensitivity of mustard leaves than spinach and mixed puree. Activation energies for visual green color were consistently higher than that for total color. Visual green color could therefore be used for on-line quality control of spinach, mustard leaves, and mixed puree during thermal processing.Type of Medium: Electronic ResourceURL: -

Protein content of biscuits increased as the level of the pulse flours increased. Wheat flour containing bengalgram and blackgram flours adversely affected the top grain, texture and colour of biscuits. Biscuits made with higher levels of bengalgram (more than 15%) were tough and difficult to break and required higher compression force. Addition of greengram flour did not significantly affect top grain, texture and colour of biscuits. The biscuits made from 15% greengram supplemented wheat flour scored the highest for flavour characteristics. Thickness, diameter and spread ratio of biscuits containing different levels of pulse flours were significantly different from control sample. Sensory evaluation scores showed that acceptable biscuits can be prepared from wheat flour supplemented with these pulse flours at a level of 15 percent.Type of Medium: Electronic ResourceURL:
